What could be better than a fresh juicy peach right off the tree? Anything made from them, of course. In this case we are enjoying peaches mixed with blueberries for the perfect crisp. This recipe is also perfect for any fruit you have on hand. Serve it up with vanilla ice cream and you have the perfect Summer dessert.
Ingredients
- 4 cups sliced peaches
- 1 cup blueberries
- 1 cup oats
- 1/2 cup AP flour
- 1/4 cup light brown sugar
- pinch salt
- 4 tbsps cold butter, cut into 1-inch pieces
- Vanilla ice cream, for serving
Directions
Preheat oven to 375 degrees F and butter an 8×8 (or similar size) baking dish.
Place fruit into the baking dish as you slice it and spread in even layer. Toss blueberries over top.
To make the topping, combine the dry ingredients. Stir to combine. Using your hands, mix in the butter until it resembles coarse crumbs.
Sprinkle topping over the fruit in an even layer.
Bake for 40-45 minutes or until the fruit is bubbling and the top is golden.
Let sit for about 30 minutes. Serve with vanilla ice cream.
